A Moment in M.O.M.'s Kitchen- Chicken Rice Soup

We love to raise our chickens on pasture with fresh air and sunshine! I put some of these blessings from the farm into my freezer. These farm fresh blessings have made for a yummy and nutritious soup on our cold, winter days. While you can use this recipe with a store bought chicken it just won't taste the same. I encourage you to look around you for resources  that might offer pasture raised animals for your dietary needs. You won't be disappointed! 


Wood family favorite Chicken Rice Soup


1 pasture raised chicken (approximately 4-5lbs)
1 stock of celery including the heart. 
3 carrots
1 white onion
1 cup of Basmati Rice
To your own taste add the following: 
garlic
salt
pepper
oregano
parsley


Boil your chicken till it falls off the bone. Then remove from the broth and take the chicken off the bone. Put the boneless chicken back into the broth and add all your ingredients except for the rice. Let it simmer for several hours, I suggest at least 2-4 hours. 1/2 hour before serving add your rice and cover the pan. Once the rice is soft you can serve. Remember your rice will continue to absorb the liquids in the soup. If you store this rice for left overs you may need to add more liquids.

  1. Wow that sounds wonderful we hope to have some chickens soon. We have to do some fencing though we have so many coyotes here I think it is cause it is so wide open. Most of our neighbors do not do any fencing except for the horses but it seems to me perfect for the coyotes they can just wander everywhere. I am going to print this out. I have not thought of using Basmati rice in a soup fabulous idea I bet its wonderful ~Blessings Love Heather
